Dallas-based casual dining chain Rockfish Seafood and Grill has promoted Seth Wilkinson to Chief Operating Officer. He has assumed responsibility for the oversight of the company after the departure of former CEO Tommy Lee. Wilkinson will work with Rockfish ownership, Princeton Capital Corporation, to expand the chain, with responsibility for company operations and employee and guest experience.

Prior to his new role, Wilkinson oversaw the Operations and Human Resources departments at Rockfish Seafood and Grill. Before his tenure at Rockfish, Wilkinson spent 10 years in various positions in the Human Resources department at Brinker International, the parent company of Chili’s Grill and Bar.
Rockfish Seafood and Grill operates 11 restaurants in Texas.
